Exchange Servers Setup >> Forest Prep

I have a Exchange 2000 server up and functioning. Clients are able to get
email using the internet option from Outlook. I have used ldp and found that
I do not have any of the items in the schema such as showInAddressBook,
msExchUserAccountControl etc...

If I now run Forestprep will I hurt the LAN, or bring down the domain?

Running forestprep and domainprep are mandatory activities and
assuming your AD is in good shape.
All the same it's a good idea to backup the DC system state and DC
file system before you carry it out. Do the job on the Schema Master
rather than on the Exchange server.

Exchange Servers Setup >> Forest Prep Rich,

You could use http://support.microsoft.com/default.aspx?scid=kb;en-us;274737
to see verify that Forestprep has been run.
