How do I limit style reformatting to only text that's selected?

I am tired, tired, tired of making simple format changes to selected blocks
of text and then waiting minutes while Word goes through the entire document
and makes the same changes globally. Usually a Ctrl-Z undo will reverse the
global reformatting, but, in big documents, a lot of time is still involved,
and sometimes the results are more damaging. There has to be a way to limit
changes made to selected text so they affect ONLY the selected text. I have
tried going into styles and formatting and turning off "automatically
update." Sometimes that works and sometimes it doesn't. Is there an easy
way to limit changes made to selected text to JUST the selected text? That
would seem to be such an obvious feature....
